
SERVES: 4 to 6
INGREDIENTS
5 to 6 yellow squash- (or combination of yellow and zucchini squash)
1 White or yellow sweet onion- chopped
2 ¾ stick of unsalted butter- ( or 6 Tbsp. Margarine)
3 Tsp. Olive oil
1 sleeve Ritz crackers crushed fine
2 eggs beaten
½ Tsp Beau Monde (spice found in the spice section of your favorite grocery store) or dried oregano
¾ cup milk
1 cup mozzarella- grated
½ Tsp. black pepper
1 9 x 9 Pyrex baking dish
PREPARATION
Sauté onion in butter until clear.
Add squash (sliced into ¼” round slices), season with Beau Monde Seasoning and black pepper. Sauté until softened, remove from heat, transfer to a large bowl, add Ritz cracker crumbs, eggs, milk, olive oil, mozzarella cheese, stir well to combine.
Place in a greased 9 x 9 baking dish, and bake in a preheated oven @ 325 degrees uncovered for 40 minutes or until golden brown.
Serve hot! It’s real good!
