Spicy Habanero Stir-Fried Shrimp
Ingredients:
3/4 Cup water
2 Tsp. soy sauce
1 Tsp. Lemon Juice
2 Tsp. Texas Gourmet Habanero Jelly
1 1/2 Tsp. Sesame oil
2 Tsp. Cornstarch
2 Tsp Vegetable oil
1 Small red bell pepper, seeded and coarsely chopped
4 oz. Snow peas trim and cut in half
3 Medium scallions, coarsely chopped
1 lb. Large shrimp, peeled and devained
1 Tbspn fresh chopped cilantro
Mix water, soy sauce, lemon juice, habanero jelly and cornstarch in a cup. Set aside. Heat oil in a large skillet until hot but not smoking. Add red bell pepper, snowpeas and scallions. Stir-fry over high heat for 3-5 minutes until tender-crisp. Reduce heat to medium high, add shrimp and stir-fry 2-3 minutes until shrimp start to turn bright pink and opaque. Pour sauce into skillet with veggies and heat 1-2 minutes, stirring once, until shrimp are opaque at the center. Stir in cilantro and serve immediately.
