Habanero/Dill Glazed Salmon

Ingredients:
Serves: 4
4 Salmon filets 6-8 oz. Each skin removed
1 Stick melted butter
1/4 Cup extra virgin olive oil
2 Tbsp. Texas Gourmet Habanero Pepper Jelly
1 Tsp. Fresh or dried dill weed
2 Cloves of garlic
3 Green onions sliced very thin
Cajun seasoning (Texas Gourmet’s Sidewinder Searing Spice

Preparation:

Preheat oven to broil, high or 500 degrees. Rinse filets in cold water lightly, then arrange in an oiled baking dish. Place melted butter, olive oil, habanero jelly, dill weed, and fresh garlic in a small sauce pan. Heat over medium high heat and stir until boiling and well mixed. Remove from heat and brush onto filets. Sprinkle Texas Gourmet’s Sidewinder Searing Spice over filets one side only. Place in oven about 8-10 inches away from the heat, and broil for about 3-4 minutes. Remove and sprinkle lightly with green onions and brush on more glaze. Place back in oven for another 4-5 minutes. Remove from oven, then cover with a foil tent and rest filets for 5-10 minutes on the counter. Spoon any juices from baking dish over filets. This recipe can be done on a grill over medium high heat placing the filets on foil and leaving the skin on until serving. Serve with steamed spinach and dirty rice.
